Roasted Brussel Sprouts

These are one of the easiest greens to serve kids, the secret’s in the toppings. Covered in parmesan and lemon, they need no convincing. You can serve these as a vegetarian side for your picky guests or top them with crumbled bacon for a decadent delight!

Roast Brussel Sprouts

Ingredients

  • 1 pound Brussel sprouts, cut in halfsies
  • 1/2 lemon to squeeze
  • 1 Tbsp extra virgin olive oil
  • 1 block of parmesan cheese to grate fresh
  • plenty of sea salt

Instructions

  1. Preheat the oven to 350º
  2. Peel apart as many sprouts as you can, separating the leaves
  3. Rub them vigorously with olive oil
  4. Bake for a bout 20 minutes
  5. They are delicious crispy like kale chips, but don't let them burn
  6. Remove from heat and drizzle over lemon juice
  7. Smother with parmesan cheese and sea salt to taste

Make a double batch of these and you can try one of my favorite breakfasts: savory oatmeal with brussel sprouts and butter. Enjoy!
