Chia Muesli With Seasonal Fruit

Are you looking for healthy breakfasts other than eggs? Me too! I whipped this one up the other day and was quite satisfied for hours. Although I was playing with pineapple guavas and pomegranates, this would be equally lovely with persimmon or blackberries. Just choose the fruit that’s in season near you and enjoy!

Pippin apple, pineapple guava, and pomegranate

Chia is a wonderful protein packed seed, but like all seeds, it’s much easier to digest when soaked or sprouted. I soaked my seeds and oats in coconut milk overnight to unlock the full nutrient potential. Bonus: my breakfast was ready and waiting for a quick topping of fruit in the morning.

Chia Oatmeal with Seasonal Fruit

Ingredients

  • 1 can coconut milk
  • 1 cup rolled oats
  • 3 Tbsp chia seeds
  • 1 Tbsp honey or maple syrup
  • * choose 2 of the following spice flavors you enjoy:
  • 1/4 tsp ground cinnamon, ground ginger, ground cardamom, or ground nutmeg
  • 1-2 Seasonal fruits to taste

Instructions

  1. Mix all of the ingredients in a covered jar and refrigerate overnight
  2. Slice up a few fruits and serve

Pineapple guava: part of the myrtle tree family form South America. A slow growing evergreen tree with beautiful edible flowers and a plethora of fruit. You can tell the pineapple guava are ripe when they start to smell fruity and they begin to fall from the tree. Simply slice open the fruit and scrape out the delicious flesh.
